The School of Business and Management at Stranahan High School thrives on engaging students in real-world challenges to help them develop entrepreneurial skills while taking learning outside the classroom.
The School of Business and Management practices evidence-based entrepreneurship. Teaching students to think like entrepreneurs while learning problem solving skills that are essential to their success later in life. Our instructional model is founded on two key concepts of entrepreneurship; 1.) ideation – how to create new ideas and 2.) customer development - the portion of the Lean Startup methodology aimed at the process for testing business hypotheses outside the building.
Students will have the opportunity to interact with current professionals in various fields and correlate curriculum content with real life experiences. Students have the choice of choosing from four pathways while earning various industry certifications, completing dual enrolment programs, and completing internships with top tier companies in the Fort Lauderdale area.

#TheCUBE - Entrepreneurship
This program offers a sequence of courses that provides coherent and rigorous content aligned with challenging academic standards and relevant technical knowledge and skills needed to prepare for further education and careers in the Business Management and Administration career cluster; provides technical skill proficiency, and includes competency-based applied learning that contributes to the academic knowledge, higher-order reasoning and problem-solving skills, work attitudes, general employability skills, technical skills, and occupation-specific skills, and knowledge of all aspects of the Business Management and Administration career cluster
Business and Entrepreneurial Principles. This course is designed to provide an introduction to business organization, management, and entrepreneurial principles. Topics include communication skills, various forms of business ownership and organizational structures, supervisory/management skills, leadership skills, human resources management activities, business ethics, and cultural diversity. Emphasis is placed on job readiness and career development. The use of computers is an integral part of this program.

Accounting Applications I. This course emphasizes double-entry accounting; methods and principles of recording business transactions; the preparation of various documents used in recording income, expenses, acquisition of assets, incurrence of liabilities, and changes in equity; and the preparation of financial statements. The use of computers and appropriate software is required.
PREREQUISITE: Business and Entrepreneurial Principles
Management and Human Resources. This course explores the reach and impact of managing people, one of the most important resources of an organization. Students are required to perform higher level strategic thinking. Topics include; management policy development, evaluating organizational effectiveness, sourcing and recruitment, hiring and retention planning, employee training, performance appraisals, compensation and benefit programs, maintaining working conditions and providing a safe working environment.
PREREQUISITE: Accounting Applications I
Business Analysis. This course is designed to provide a higher level of understanding of business systems, accounting concepts, working with financial information, data analysis skills, managing business information with appropriate software, requirements analysis of information systems, data modeling, and database management.

The courses offered provide coherent and rigorous content aligned with challenging academic standards and relevant technical knowledge and skills needed to prepare for further education and careers in the Hospitality and Tourism Industry;
Through a combination of classroom instruction and hands-on experience, students learn the skills and knowledge needed to succeed in this dynamic and fast-paced industry. They have the opportunity to participate in internships and other work-based learning experiences that provide real-world exposure to the industry and help them build valuable professional networks.
Graduates of the program are well-equipped to pursue careers in a variety of fields, including hotel and restaurant management, event planning, travel and tourism, and culinary arts. They also have the option to continue their education at the college level in hospitality and tourism programs or related fields.

The purpose of this course is to prepare students for careers as entrepreneurs, present entrepreneurship as a career path worthy of consideration, provide students with the skills needed to realistically evaluate their potential as business owners, and develop the fundamental knowledge and skills necessary to start and operate a business. Students further refine their business plan while operating their business under the guidance and mentorship of industry professionals.
This course culminates in a Student Business Expo designed to provide our young entrepreneurs with an opportunity to begin or strengthen their company’s presence in the community.

Culinary Arts

Culinary Arts I. This course covers the history of the food service industry and careers in that industry. Also covered are safety in the workplace; employability skills; leadership/teamwork skills; care and use of commercial culinary equipment; basic food science; basic nutrition; and following recipes in food preparation labs.
PREREQUISITE: None
Culinary Arts II. In this course students will learn state mandated guidelines for food service; how to attain food handler training certification; and perform front-of-the-house and back-of-the-house duties. Students will prepare quality food products and present them creatively; demonstrate safe, sanitary work procedures; understand food science principles related to cooking and baking; and utilize nutrition concepts when planning meals/menus.
PREREQUISITE: Culinary Arts I
Culinary Arts III. In this course the student will research career opportunities in professional cooking/baking; follow guidelines on food selection, purchasing, and storage; and use communication skills. Students will prepare and present a variety of advanced food products; create centerpieces; and research laws specific to the hospitality industry. Also covered are management skills; how to develop a business plan; and utilization of technology in the workplace. Students will be knowledgeable about food safety manager training/certification training programs that are acceptable in Florida.
PREREQUISITE: Culinary Arts II
Culinary Arts VI - Gastronomy and Garde Manger Skills. This course provides opportunities for students to apply their acquired knowledge and skills in culinary related scenarios. This is a culminating course to develop advanced culinary techniques and skills. Students will learn using modern technology and culinary trends. To complete the program, students must create and present a selection of designs for development of a hospitality business using appropriate software applications.
The use of computers is an integral part of this course.

Electives correlate to identified pathways. Pursuing electives outside of your pathway depends on availability and instructor discretion (please see instructor for prerequisite details). Students must be a member of their magnet program's career and technical student organization (CTSO) and will be encouraged to participate in CTSO events.
Magnet Distinction Requirements
Students earning magnet distinction will have completed 3 pathway courses, earned one or more industry certifications, acquired at least 100 service hours (60 of which related to their program of study known as magnet service hours), completed their summer internship* (summer of junior year), completed and successfully presented senior year project, and maintained academic performance and course requirements consistent with magnet standards for their program of study.
